7 Swans a Swimming: Paprika Salmon over Spinach

2 pounds salmon fillets

1/4 cup orange juice

2 t. thyme, divided

1 t. grated orange peel

1 t. paprika

Optional: Top the spinach with sliced fresh strawberries

1 T. brown sugar

2 T. (plus 1 t.) olive oil, divided

1 t. cinnamon

1/2 t. sea salt

10 ounces fresh spinach leaves

Equipment: measuring spoons, glass dish, bowls, tongs to flip salmon

Mix orange juice, olive oil and thyme in small bowl.

Place salmon in glass dish. Add marinade; turn to coat. Cover. Refrigerate 30 minutes, longer for extra flavor.

Preheat oven to 400°F.

Mix brown sugar, paprika, cinnamon, orange peel, remaining thyme and sea salt in small bowl.

Remove salmon from marinade. Place in greased foil-lined baking pan. Discard remaining marinade.

Rub top of salmon evenly with paprika mixture. Roast 10 to 15 minutes or until fish flakes easily with a fork.

Heat remaining oil in large skillet on medium heat. Add spinach; cook 2 minutes or until wilted. Serve salmon over spinach.
