6 large eggs
1/8 t. salt, dash of pepper
2 T. mayonnaise
Option: Garnish with a sprinkling of paprika
Place eggs in a saucepan, and add enough water to cover them.
Bring to a boil; cover, remove from heat, and let stand 15 minutes.
Drain immediately, then cool eggs by re-filling the saucepan with cold water and a few ice cubes.
When cool to the touch, remove the egg from the shell by tapping each one firmly on the counter until cracks form all over the shell. Peel under cold running water.
Slice eggs in half lengthwise, and remove the yellow yolks.
To make the filling, mash yolks and add mayonnaise, salt, and pepper, and mix throroughly.
Spoon yolk mixture into egg whites.
Garnish, if desired. And serve. Yum!
