4 cups coconut milk
4 T honey or agave
Garnish: whipped cream, mint, cinnamon
4 T cocoa powder
2 t vanilla
Pour coconut milk into a saucepan.
Stir in rest of ingredients.
With a wooden spoon stir mixture until it simmers.
Pour into mugs, garnish as desired. Enjoy!
Remove salmon from marinade. Place in greased foil-lined baking pan. Discard remaining marinade.
Rub top of salmon evenly with paprika mixture. Roast 10 to 15 minutes or until fish flakes easily with a fork.
Heat remaining oil in large skillet on medium heat. Add spinach; cook 2 minutes or until wilted. Serve salmon over spinach.
